Ingredients

  • 2 large eggplants

  • 1 zucchini, cubed

  • 3 green peppers

  • 4–5 whole peeled tomatoes (or 1 can)

  • 3–4 garlic cloves, sliced

  • Olive oil

  • Sesame seeds and çörek otu (nigella seeds), for topping

  • Fresh parsley, chopped

  • Salt and pepper to taste

Directions

  • Roast the eggplant
    Poke holes all over the eggplants with a fork, brush generously with olive oil, and bake at 400°F for about 40 minutes — or use the roast setting on an air fryer. You want the eggplant completely soft and collapsing.
  • Cook the zucchini and tomato base
    Cube the zucchini and fry in about 3 tbsp olive oil until browned on the edges and sides. Add the green peppers, whole peeled tomatoes, garlic, salt and pepper. Cook everything together until it’s fully combined and soft, breaking up the tomatoes as they cook.
  • Combine
    Once the eggplant is roasted and cool enough to handle, peel it (or scoop the flesh out with a spoon) and mix it into the tomato and zucchini base until well combined.
  • Finish and serve
    Top with fresh parsley, sesame seeds and çörek otu, and drizzle with a little extra olive oil. Serve warm or cold — either way it’s excellent on toasted bread.

Notes

  • Roast the eggplant fully. It should be completely soft all the way through — undercooked eggplant will leave the texture stringy instead of creamy.
  • Brown the zucchini before adding the tomatoes. Getting some color on the edges first adds a depth of flavor that boiling or steaming won’t give you.
  • Serve it both ways. This is genuinely one of those dishes that’s just as good cold from the fridge the next day as it is warm right off the stove — don’t feel like you have to eat it fresh.
